Lemon Rice...



Ingredients:


Cooked rice - 2 cups
Coriander leaves - 1 tbsp1
Lemon - 2 medium sized
Salt - to taste

For tempering:

Peanuts - 3 tablespoon
Curry leaves - 10
Oil - 1 to 2 tbsp
Black Mustard seeds - 1/2 teaspoon
Red chillies - 2
Ginger - a small piece
Hing - A generous pinch
Turmeric powder -1 tsp

Method for Lemon Rice


  • Heat 2 teaspoon of oil in kadai , fry peanut till light brown in color(2 minutes)
  • Heat oil in a frying pan, add mustard seeds, allow to splutter.
  • Add green chilly and curry leaves stir fry for few seconds
  • Add peanuts, turmeric powder and salt and fry for one minute.
  • Now add boiled rice and mix well.
  • Turn the heat off, add lemon (nimbu) juice and mix well.
  • Lemon rice is ready to be served with Cucumber Raita
