Ingredients:
Cooked rice - 2 cups
Lemon - 2 medium sized
Salt - to taste
For tempering:
Peanuts - 3 tablespoon
Curry leaves - 10
Oil - 1 to 2 tbsp
Black Mustard seeds - 1/2 teaspoon
Red chillies - 2
Ginger - a small piece
Hing - A generous pinch
Turmeric powder -1 tsp
Method for Lemon Rice
- Heat 2 teaspoon of oil in kadai , fry peanut till light brown in color(2 minutes)
- Heat oil in a frying pan, add mustard seeds, allow to splutter.
- Add green chilly and curry leaves stir fry for few seconds
- Add peanuts, turmeric powder and salt and fry for one minute.
- Now add boiled rice and mix well.
- Turn the heat off, add lemon (nimbu) juice and mix well.
- Lemon rice is ready to be served with Cucumber Raita
