SABUDANA KHICHDI


Ingredients

2 cups sabudana
1 cup of raw peanuts.
1 tsp. cumin seeds
6 green chilies
4 tbs. ghee
1/2 lemon finely chopped
fresh coriander for garnishing
1/2 cup freshly scraped coconut
Curry Leaves
Salt to taste.
A pinch of turmeric.

Method


Wash sabudana, drain and set aside for one hour. If you feel that the sabudana is getting too dry, go ahead and sprinkle a few drops of water so it stays moist.Just before cooking add 1 1/2 spoons of salt to the sabudana as it soaks up the salt really well..Take a dry kadai and dry roast the peanuts first and then add the red chillis. Keep the flame on medium low and roast. In a kadai, add a spoon of ghee and a spoon of oil and when it begins to smoke, toss the jeera, slit green chillis and the curry leaves. . Mix in sabudana , peanuts and sugar to taste. Keep covered and cook on slow flame for 5-10 minutes. You can add small cubes of boiled or fried potatoes. Garnish with coconut and coriander leaves. Serve hot.


Chicken Sandwiches...


Ingredients:

1 chicken breast with bones.
1 tbsp oil
6 bread slices
1 tbsp butter-to spread on bread
1/2 onion-cut into very thin slices and separated
5-6 tbsp ready-made mayonnaise
1/2 tsp pepper
3/4 tsp oregano
1 tsp mustard
1-2 Lettuce or inner cabbage leaves-torn roughly with hands.

Method:

  1. Put chicken and oil in a micro proof dish.Mix well and microwave covered for 3 minutes.Let it cool.shred chicken into tiny pieces.Discard bones.
  2. In a bowl mix together chicken,onion,mayonnaise,salt,Pepper,oregano & mustard.Add lecttuce leaves.check seasonings.
  3. Spread the chicken mixture on the unbuttered side of the bread slice.
  4. Top with another slice,keeping the buttered side outside.Put sandwich on the high rack.Grill for 4 minutes.Turn side and grill for 2 minutes till both sides are crisp & golden.

Veggie Pizza...


Ingredients:

2 ready-made pizza bases.
100-150 gms mozzarella or pizza-grated(1-1.1/2 cups)
1/2 yellow or 1/2 green capsicum & 1/2 onion-cut into 1/2"squares.
a few olives,1 tomato-cut into 8 pieces
2 tbsp corn kernels or 3-4 baby corns-cut into thin long slices.

Tomato spread

1 tbsp oil,1 tsp garlic paste
1/2 cup ready-made tomato puree.
2 tbsp tomato ketchup,
1 tsp orengano
1/2 tsp salt and 1/4 tsp pepper

Method:
  1. Brush the bottom of the pizza base with oil & place with bottom side up on the greased tawa placed on a high rack.Grill for 3 minutes till crisp.
  2. For tomato spread,put all ingredients of the tomato spread in a bowl and microwave for 2.1/2 minutes.Spread on each pizza base,leaving the edges.
  3. Arrange some vegetables.sprinkle some salt and pepper.Sprinkle cheese & a some oregano.Arrange a few vegetables on top.
  4. Gill again for 4 minutes.


Kadhi Pakora


Ingredients:

Pakoras-

1/2 cup gram flour(besan)-sifted
1/2 onion & 1/2 potato-finely chopped
a pinch of mitha soda,1/4 tsp baking powder
1 tbsp chopped coriander,1/2 tsp chopped ginger
1/2 tsp salt,1/4 tsp garam masala,1/2 tsp coriander powder

KADHI-

1/4 cup gram flour(besan),1 cup curd,3 cups water
1/4 tsp turmeric(haldi),1 tsp salt,1/2 tsp red chilli powder
Temper
2 tbsp oil,1/4 tsp each cumin seeds & mustard(rai)

Method:
  1. Mix all ingredients of pakoras,adding water very gradually to get a thick soft paste of dropping consistency.Beat for 2 minutes till light and fluffy.Grease a flat dish.Put pakora batter with a tsp in the dish,leaving some space in between.Microwave for 1.1/2 mins.
  2. Mix all ingredients of kadhi till smooth.strain into a deep bowl.Microwave for 10 mins,stirring once in between.Add pakoras.
  3. For tempering,mix oil with cumin & mustard.Microwave for 2 minutes.Add red chilli & garam masala to hot oil.Pour over the kadhi .Serve.



Dum Murg Kali Mirch...


Ingredients:

1/2 chicken(400)gm,cut into 8 pieces
MARINADE
1/2 cup thick yogurt(dahi)-hang for 30 minutes
8-10 almonds-ground to a powder
1 tbsp ginger-garlic paste,1 tbsp oil
1/2 tsp red chilli powder,3/4 tsp salt
1/2 tsp garam masala powder
Other ingredients:
3 t6bsp oil,1/2 tsp peppercorns
2 onions-ground to a paste
1 tsp ground coriander(dhania powder)

Method:
  1. Marinate chicken in the marinade ingredients for 30 minutes .
  2. Put oil,peppercorns,dhania powder and onion paste in a microwave proof dish.Mix well and microwave for 5 minutes.
  3. Add the chicken along with the marinade and mix well.Microwave uncovered for 5 minutes.Mix well.
  4. Add 3/4 cup water and 1/2 tsp salt.Microwave uncovered for 4 minutes.or till it boils.Let it stand for 5 minutes.
  5. Sprinkle some crushed peppercorns and serve hot.

Coconut Breakfast Bars


Ingredients:
4 large eggs
1 cup heavy cream
1 cup water
3 tsp. vanilla
2 scoops vanilla whey protein powder
1 cup almond flour(grind almonds in blender)
1 cup Splenda
1 cup unsweetened coconut

Method

Place all ingredients into a large bowl. Stir until well combined. Pour into a greased(I use Pam)9x13 casserole. I sprinkle splenda sweentened coconut on top,also. Bake for approx. 1 hour at 350 degrees until golden brown.

Easy Chocolate Mousse


Ingredients:
1 Pack sugar free chocolate pudding mix (get brand with the lowest carbs) 1 pint HEAVY whipping cream (keep it as cold as possible)

Method:

Get a large metal mixing bowl and fill it with one layer of ice Put a 2nd smaller metal mixing bowl in in the ice bowl and let it get super cold Put pudding mix in smaller bowl, and slowly add whipping cream to it, beating with an electric mixer until its all added in. The longer you mix it, the smoother and moussier(?) it becomes. I have done it with super-cold whipping cream and a refrigerated mixing bowl and it works, but for the best effect use the ice bowl method. Portion it into small tea cups or whatever (it should make 6-8 servings) and top with a dollop of sugar-free cool whip if you want, just before eating. Delicious!

Crab Won Tons with Blackberry Szechuan sauce

  • 1/2 Cup Blackberry puree
  • 1/2 Tsp Ginger, grated
  • 1/2 Cup Saki (or dry sherry)
  • 1 Tsp Lime juice
  • 1 Tbl Cornstarch
  • 2 Garlic cloves, minced
  • 1/2 Tsp Salt (to taste)
  • 1 1/2 Tbl Honey
  • 1/2 Tsp Red pepper flakes (to taste)

  • 3 Oz Spinach, fresh
  • 2 Tbl Lemon juice
  • 1 Tbl Butter
  • 2 Tbl Breadcrumbs, dry
  • 4 Tbl Onion, chopped finely
  • 1/2 Lb Crabmeat, flaked, cooked
  • 3 Oz Cream cheese
  • 1 Dash Salt, pepper, tabasco (opt)

  • 36 Won Ton wrappers
  • 1 Vegetable oil
BLACKBERRY PUREE: Place 1 cup fresh or thawed whole frozen blackberries in food mill, blender, or food processor ans process until smooth. If desired, seeds may be removed by straining through a medium sieve and using a rubber spatula to press pulp through while scraping underside of sieve. Add sugar to taste. A good rule of thumb for sweetening is about 2 T sugar per cup of whole berries.


SZECHUAN SAUCE:Mix all ingredients in saucepan. Bring to a boil over medium-high heat and cook until clear and thickened. (The flavor of this sauce improves after standing overnight.)
For filling:
Wash spinach. With water still clinging to leaves, place in large pan over medium-high heat. Cook until spinach just begins to wilt and most of water has evaporated. Empty onto cutting board and chop finely. Set aside. Melt butter in sauté pan. Add onion and sauté until transparent. Reduce heat to low; add cream cheese. When the cheese begins to soften, add lemon juice to blend. Remove from heat and stir in crab, breadcrumbs, and spinach.
For won tons:
Place 1-2 tsp. filling in each wrapper and seal according to package directions. Place single layer of won tons in hot oil and fry 2-3 minutes until golden brown. Drain on paper bags or paper towels, and serve immediately with Blackberry Szechuan Sauce.
