Fish steak with Mashrooms...


Ingredients:

1/2 cup dry white wine
11/2 tbs white wine vinegar
3 tbs soy sauce
1 inch piece fresh ginger grated
1 tbs sugar
1 tbs salt
2 large halibut steaks
mushrooms thinly sliced
green onions including tender green portion cut diagonally.
separate 1 tbs of green portion for garnish.

To cook reduced quantities:do not reduce marinade at all.

Method:
  1. In a shallow bowl,mix together all ingredients excepts fish,mushrooms and green onions.Add fish steaks,Turn them in sauce and marinate for 1 hour.
  2. Put grid in cooker.Place fish on grid.Pour marinade into cooker,Arrange mushrooms and onions excepts the 1 tbs reserved for garnish over fish.
  3. Close cooker,Bring to full pressure on high heat.Reduce heat and cook fir 6 minutes.
  4. Remove cooker from heat.Press finger tip control lightly to release pressure.
  5. Open cooker,Place fish with vegetables on serving dish.
  6. keep hot,Remove grid from cooker.
  7. Return cooker to high heat and boil till liquid is reduced to half,stirring occasionally.Pour over fish,serve hot,garnished with reserved green onions.
