Semolina-Coconut Cake


  • Ingredients
2 cups semolina-suji or rava-ghee roasted for 2 mins and powdered
1/2 cup powdered milk
1/2 cup powdered sugar
2 cups dried coconut2 tsp baking powder
1/2 cup butter
1 tbsp vegetable oil1
1/2 cup water
2 tsp vanilla essence
20 kismis10 crushed cashewsfew skinned almond halves-for garnishing
1/2 cup dried coconut-for garnishingfor Sugar Syrup:
1 1/2 cup sugar
1 cup cups water

Directions

  • Mix together semolina,powdered milk,powdered sugar,dried coconut,baking powder,butter,kismis and crushed cashews in a large bowl.
  • Mix together the liquid ingredients(water,vegetable oil and vanilla essence) in another bowl.
  • Add the liquid mixture into the semolina-coconut mixture and mix well to make a thick batter.
  • Pour the batter into a baking pan .Press a peeled almond and 1/4 cup dried coconut on top.Then cut the squares such that the squares will have an almond on top.
  • Bake the dish at 350 degree F till golden around edges and lightly browned on top in a cake oven.
  • Meanwhile prepare the sugar syrup.Dissolve the sugar in 1 cup water and boil without stirring for 10 mins.
  • When the cake got baked ,remove it from the oven and cut them into square shaped(in the same cut u did before placing it in the oven) with a knife.
  • Pour 2 tsp sugar syrup and 1 tsp dried coconut on top of each squares and allow the the sugar syrup to soak in for 10 mins.
  • Remove the squares from the baking pan and serve them warm.

PUNJABI SUKHI CHANA DAAL RECIPE


Ingredients:
1 cup - Chana dal
1 Onions, chopped
Salt To taste
1 - Turmeric Powder
Handful - Pinch Corainder leaves
2 - Cinnamon sticks
2 - Cloves
1 - Bayleafs
1/4 tsp - Cumin seeds
1 tsp - Lemon Juice
1 tbsp - Ghee

Preparation:

  • Clean, wash and soak chana dal for one hour.
  • Pressure cook the dal with 3 cups of water.
  • Keep aside.Heat ghee in a pan, add cloves, cinnamon stick, bayleafs, cumin seeds and fry until they pop up.
  • Add onions and fry till brown.
  • Add salt and turmeric powder. Mix well.
  • Add dal and let it boil for few minutes.Garnish with corainder leaves.
  • When the dal will be cool, add lemon juice and stir well.
  • Serve sukhi chana daal hot with rice or paratha.

MOONG DAL VADA RECIPE


Ingredients:



300 gms Moong Dal
25 gms Chopped Coriander
5 gms Cumin Seeds
1 Star anise
8 - 9 Green Chillies chopped
50 gms Onions
Salt to taste
Oil to fry
How to make moong dal vada :
  • Soak the moong dal in water for a couple of hours.
  • Grind it properly to form a smooth paste.
  • Blend it with chopped onions, chillies, corainder and cumin seed.
  • Check the salt seasoning and deep fry till golden in color.
  • Serve with green chutney.

Chicken Mushroom Rice Receipe



Ingredients:
1/4 cup long grain white Rice (Chawal)
2 tblsp Vegetable oil (Vanaspati)
1 small chopped finely Onion (Pyaj)
2 chopped finely Garlic Cloves (Lasun)
2 seeded and cut into slivers Red chili (Lal Mirchi)
225 gms chopped finely Chicken breast meat
85 gms chopped or cut into matchstick strips Bamboo Shoots
8 dried, soaked for 30 minutes, drained and chopped Chinese Black Mushrooms (Goochi)
2 tblsp dried Shrimps
1 tblsp Fish Sauce
25 Thai Holy Basil Leaves (Tulsi)
Thai Holy Basil Sprig to garnish
As required Salt (Namak)

How to make chicken mushroom rice top:

Cook rice.
Heat oil in a wok.
Combine onion and garlic.
Cook till golden.Stir occasionally.
Combine chilies and chicken.
Fry stirring for 2 minutes.
Stir in bamboo shoots, mushrooms, dried shrimps, fish sauce and salt.Stir continously 2 minutes.Combine in the rice and basil.
Stir well.Garnish with basil sprig.
Serve hot.

Recipe For Chicken Korma


Ingredients:
1 (2 1/2 pound) cut-up chicken
2 cups yogurt
3 cloves garlic
2 medium onions, chopped
1 tsp paprika
2 tsp fresh ginger, chopped
2 tsp peanut or sunflower oil
2 tsp ground coriander
1/2 tsp ground chili
1 tsp cumin
Seeds of 2 peeled cardamom pod
1 tsp poppy seed
1 tsp turmeric
1 bay leaf
2 tbsp fresh coriander, chopped

How to make chicken korma:

  • Place chicken in bowl and marinate in yogurt, 1 clove garlic, half an onion, paprika, ginger, salt and pepper for a few hours.
  • Heat oil in large heavy casserole; gently sauté remaining onion and garlic for 1 minute. Remove and set aside.
  • Add to casserole the coriander, chili, cumin, cardamom seeds, poppy seed and turmeric. Fry for a few minutes. Add the chicken. Pour enough water to cover and add remaining marinade.
  • Add onion and garlic with bay leaf. Simmer 45 minutes or until chicken is tender. Sprinkle the chicken korma with fresh coriander and serve.

DAAL MAKHANI RECIPE (Maa Ki Daal)


Ingredients:
1 cup whole urad daal (urad sabut)
1tbsp Red kidney beans (Rajma)
1 onion finely chopped
1 tomato finely chopped
1" Ginger piece
2-3 green chilies finely chopped
chopped coriander leaves
4-5 flakes Garlic paste
1/2 cup stirred curd
1/2 cup fresh stirred cream (malai)
2tbsp butter
1tsp cumin seeds (jeera)
1/2tsp turmeric powder
1/2tsp Garam masala
Red chili powder to taste
1/2tsp dhania powder
Salt to taste

How to make dal makhni :

  • Soak rajma in water overnight.
  • Add water & little salt and pressure-cook Rajma and urad daal till soft for about 20-25 minutes.
  • Mash and boil again for 15-20 minutes and add curd and cream to the daal.
  • Now in kadhai heat oil, splutter cumin seeds and add garlic paste, fry till light brown.
  • Add onions and fry till golden brown.
  • Now add ginger, green chilies and tomatoes and fry till tomatoes soften.
  • Now add dry masalas (turmeric powder, chili powder, dhania powder & salt) and fry again for a moment.
  • Add daal and stir on medium flame.
  • As soon as it starts boiling remove from the gas.
  • Sprinkle garam masala powder and garnish daal makhni with coriander and add butter.Serve daal makhni hot. Goes well with laccha paratha, naan or rice.

Peda Recipe


Ingredients:
1/2 kg Soft white khoya
2-1/2 cups (approx.300gms) sugar powdered
1/2 tsp cardamom powder
1 tsp cardamom seeds semi crushed
1 tbsp slivered or crushed pistachios

How to make peda:

  • Grate khoya with a steel (not iron) grater.
  • Add powdered sugar and mix well.
  • Put mixture in a large heavy or nonstick pan.
  • Heat first on high for few minutes.
  • The on slow till done.
  • Make sure to stir continuously, while on heat.When mixture thick and gooey, add cardamom.Mix well, and take off fire
  • .Allow to cool, gently turning occasionally
  • .Use cookie moulds, or shape pedas with palms into patty rounds.
  • Mix pistachios and cardamom seeds and press a bit on top of each.
  • If using moulds, first sprinkle some at bottom.
  • Take some mixture and press into mould.
  • When set well, invert and carefully, unmould. The pedas are ready to be served.

Boondi ka Ladoo


Ingredients:
1 cup Besan
1 pinch Kesari
1 pinch Cardamom powder
1 tbsp Rice flour
1 pinch Baking Powder
1 tbsp Melon seeds
1 tbsp Broken Cashew nut
2 cups Oil Sugar
1 cup Water

How to make boondi laddu:

Mix the flour, rice flour, baking powder and colour.Make a smooth thick batter. Heat the oil. Take the batter and pour it over a sieve with round holes.Tap it gently with a spoon so that small balls of dough fall into the oil. Make the balls and keep aside. Heat the sugar and water till reaches 1/2 thread consistency.Mix in the kesari melon seed and cardamom powder and fried boondies. When the mixture is still warm make into balls. Bondi Ladoo are ready to be servedIf the mixture cools balls cannot be made as the sugar crystallizes.
